Coconut Spinach-Artichoke Dip and Pita Chips
This spinach-artichoke dip will have you coming back for more, but without the guilt when you make it with your own homemade coconut mayonnaise.
INGREDIENTS | SERVES 8
4 large artichokes, steamed
1 pound fresh baby spinach
2 jalapeƱos, seeded and chopped
1 cup shredded Parmesan cheese
1 cup Coconut Cream Mayonnaise (see Chapter 20 )
4 ounces cream cheese
1 cup shredded mild white Cheddar
Sea salt, to taste
1 package whole-wheat pita bread
Coconut oil, as needed
Hot Peppers
When using hot peppers in recipes, you can control the heat of the dish by removing the seeds for a milder heat or leaving them in for more kick if you like it hot!
